Allgäu cheese dumplings

Ingredients for 4 servings:

  • 6 rolls
  • 3 eggs
  • 1 tbsp parsley, finely chopped
  • 1 onion(s), finely chopped
  • 125 ml milk
  • breadcrumbs
  • salt and pepper
  • 1 tsp marjoram
  • 100 g bacon, cooked, smoked, diced
  • 150 g mountain cheese

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 20 minutes

Bread dumplings with a twist – also suitable as a soup garnish

Fry the bacon cubes, sauté the onions and parsley, and add the marjoram. Then let it cool. Boil the milk and soak the rolls in it. Add the eggs, bacon-wrapped onions, herbs, and about 100 g of grated mountain cheese, season with salt and pepper, and make a bread dumpling mixture. If the mixture is too wet, add as much breadcrumbs as needed. Cut the remaining mountain cheese into cubes (about 1-1.5 cm). Form bread dumplings and fill each with a cube of mountain cheese. Place the dumplings in boiling salted water and let them stand for about 30 minutes. The cheese should be nicely melted. The cheese dumplings can be dressed with sauerkraut and finished with brown onions. Served as a soup garnish in meat broth, you have an Allgäu cheese dumpling soup.
