Ingredients for 8 servings:
- 700 g Allgäu cheese, sliced
- 1 bunch of radishes
- 150 g Cornichon(s), small pickled gherkins
- ¼ head of iceberg lettuce
- 60 g sour cream
- 60 g natural yogurt
- 1 tbsp oil
- ½ lemon(s), juice
- 1 garlic clove(s)
- salt and pepper
- Sugar

For the dressing, mix sour cream with yogurt, lemon juice, oil, and crushed garlic clove. Season to taste with pepper, salt, and sugar. The dressing can also be prepared very well using a hand blender. If necessary, remove the rinds from the cheese slices and cut them into strips approximately 1/2 cm wide and 4 cm long. Place them in a bowl and toss with the dressing. Wash and trim the radishes and cut them into thin slices. Wash the iceberg lettuce and cut them into strips. Drain the gherkins and cut them into thin slices. Add all ingredients to the cheese and mix together, letting them marinate for a while. If you add the iceberg lettuce and radishes shortly before serving, you can even prepare the salad the night before. The salad will be especially flavorful if you replace half of the Allgäu cheese with a less strong mountain cheese. With 8 servings, one serving has 356 kcal.
