Almond chocolate muffins

Ingredients for 12 servings:

  • 150 g flour
  • 2 tsp baking powder
  • 100 g ground almonds
  • 1 pinch of salt
  • 1 packet of vanilla sugar
  • 2 eggs
  • 100 g sugar
  • 4 cl Amaretto (almond liqueur)
  • 140 g butter, soft
  • 50 g chocolate shavings

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Line a muffin tin with paper baking cups. Combine flour, baking powder, almonds, salt, and vanilla sugar in a bowl. Beat eggs with sugar and amaretto until frothy, gradually adding the softened butter. Add the egg mixture to the flour mixture and briefly fold in the chocolate shavings. Fill the muffin tins two-thirds full with batter. Bake in a preheated oven at 180°C for about 20 minutes. Once cooled, top with rum glaze.
