Almond milk pudding with chia seeds and papaya

Ingredients for 2 servings:

  • 300 ml almond milk (almond drink)
  • 30 g seeds (chia seeds)
  • 1 pinch vanilla powder (bourbon vanilla)
  • 0.33 tsp cinnamon powder
  • 1 papaya or mango, ripe
  • 2 tbsp lemon juice
  • 1 tsp sesame seeds

Instructions

Working time approx. 15 minutes; Rest period approx. 6 days 12 hours; Total time approx. 6 days 12 hours 15 minutes

Refine the almond milk with cinnamon and bourbon vanilla. Add the chia seeds and let them soak in the milk overnight or for a few hours. Stir to avoid lumps. Peel the papaya, remove the seeds, drizzle with lemon juice, and puree or mash with a fork. Pour the papaya puree over the almond milk pudding, sprinkle with sesame seeds, and serve.
