Almond muffins

Ingredients for 6 servings:

  • 100 g flour (wholemeal flour)
  • 100 g ground almonds
  • 50 g almonds, chopped
  • 2 eggs
  • 125 g natural yogurt
  • some rum flavor
  • n. B. Sweetener, replacement for 150g sugar
  • 1 tsp baking soda

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

no fat, no sugar

Beat the eggs, sweetener, yogurt, and rum flavoring with a hand mixer for 3 minutes. Add the almonds, flour, and baking soda, and continue beating on high for 2 minutes. Pour the batter into muffin cups (I made enough for 6 muffins). Bake at approximately 160 degrees Celsius (320 degrees Fahrenheit). Note: Many sweetener bottles come with a measuring cup that you can use to convert the amount of sugar.
