Almond-pistachio macaroons with candied fruits

Ingredients for 1 servings:

  • 3 egg whites
  • 1 pinch of salt
  • 110 g powdered sugar
  • 100 g marzipan paste
  • 200 g almond(s), peeled, sliced
  • 50 g almond(s), peeled, chopped
  • 50 g ground almonds
  • 1 pack of chopped pistachios
  • 100 g mixed candied fruits, finely chopped
  • 2 drops of bitter almond flavor
  • 3 drops butter-vanilla flavoring
  • 3 drops flavoring (orange oil)
  • Cake icing (chocolate icing), for decoration

Preheat oven to 150°C. Beat the egg whites with a pinch of salt until stiff peaks form, then gradually add the powdered sugar. Continue beating. Break up the marzipan mixture and stir it into the egg white mixture with the sliced ​​and chopped almonds and pistachios. Finally, mix in the finely chopped candied fruit (or candied lemon peel, candied orange peel, or candied cherries) and the baking flavorings. If the mixture is too runny, thicken with ground almonds if desired. Place small piles on a baking sheet lined with baking paper and bake for about 20 minutes. The macarons should still be soft inside. Makes 2 trays! Let cool briefly, then drizzle with chocolate icing as desired. Store in a cookie tin once completely cooled.
