Almond quark waffles

Ingredients for 4 servings:

  • 2 eggs
  • 50 g butter
  • 3 tbsp cane sugar
  • 1 pinch of vanilla powder
  • 125 g low-fat curd cheese
  • 50 g natural yogurt
  • 70 g spelt flour
  • 30 g almonds, ground
  • ½ tsp baking powder
  • vegetable oil
  • powdered sugar
  • 1 pinch of salt
  • Fat for the waffle iron
  • possibly powdered sugar for dusting

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Cream the butter, sugar, and vanilla until creamy, then gradually add the egg yolks. Once well blended, stir in the quark and yogurt. Mix the flour, almonds, and baking powder, then gradually stir into the quark mixture. Finally, carefully fold in the beaten egg whites. Lightly grease the waffle iron and bake the waffles. Dust with powdered sugar, if desired.
