Almond raisin muffins with cinnamon

Ingredients for 1 servings:

  • 260 g flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 150 g sugar
  • 60 ml oil
  • 1 egg(s)
  • 150 ml milk
  • 50 g almonds
  • 75 g raisins
  • 2 tsp cinnamon and sugar for sprinkling

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Combine the flour with the baking powder, salt, cinnamon, and sugar. In another bowl, combine the oil, egg, and milk. Add the wet ingredients to the dry ingredients and mix well. Stir in the almonds and raisins. The batter should be creamy. Add a little more flour or milk if needed. Pour the batter into greased muffin cups or paper baking cups and sprinkle with the cinnamon-sugar mixture. Bake at 200 degrees Celsius (convection oven) for about 10 minutes.
