Almond Slices

The perfect almond slices recipe with a picture and simple step-by-step instructions.

  • 2 Organic lemons
  • 8 Eggs
  • 200 g Sugar
  • 1 packet Vanilla sugar
  • 100 g Flour
  • 2 tsp Baking powder
  • 200 g Ground almonds
  • 150 g Almond sticks
  • 200 g Powdered sugar
  1. Wash the lemons with hot water and dry them, grate the peel finely and squeeze out the juice. Separate the eggs. Beat the egg yolks, 150 g sugar and vanilla sugar with the whisk of the hand mixer until creamy. Mix the flour and baking powder, stir into the dough with the ground almonds, 3 tablespoons of lemon juice and zest. Preheat the oven to 180 ° C. Line a baking sheet with parchment paper.
  2. Beat the egg whites and the remaining sugar until stiff. Stir a quarter of the egg whites into the dough, carefully fold in the rest of the egg whites. Place the dough on the baking tray, spread evenly and sprinkle with almond sticks. Bake in the oven (center) for about 20 minutes until golden brown. Take out the cake and let cool down completely.
  3. For the icing, stir in the icing sugar and 3-4 tablespoons of lemon juice until smooth, spread on the cake and let set.
