Ingredients for 1 servings:

  • 350 g biscuits, dry biscuits or Christmas biscuits without jam, chocolate, etc.
  • 150 g butter, liquid
  • 75 g maple syrup
  • 1 tsp cinnamon powder
  • 80 g orange juice (freshly squeezed)
  • 250 g QimiQ Classic
  • 4 sheets of gelatin
  • 300 g natural yogurt 3.5%
  • 500 g quark (cottage cheese)
  • 3 tbsp jelly, warmed

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Refrigerator cake, with QimiQ

Make the base from small crumbled biscuits and butter and press into a 24 cm square tin. Stir the QimiQ until smooth and mix well with the syrup, cinnamon, yogurt, curd cheese, and orange juice. Dissolve the gelatine, dripping wet, in a water bath over low heat. Stir a little yogurt mixture into the dissolved gelatine, then stir the entire gelatine mixture into the yogurt mixture. Spread the mixture over the chilled base. Use a tablespoon to make small waves in the mixture and then chill for 3 hours. Decorate with the jelly and other toppings and serve cut into slices, ideally with a dollop of stiffly whipped cream.
