Banana Cornflake Muffins

Ingredients for 12 servings:

  • 125 g flour
  • 2 tsp baking powder
  • 100 g sugar, brown
  • 3 eggs
  • 1 tsp lemon(s), zest
  • 75 g butter, melted
  • 125 g sour cream
  • 2 bananas, ripe
  • 1 tbsp lemon juice
  • 100 g cornflakes, crushed

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 175°C and grease a muffin tin thoroughly or line it with paper baking cups. Combine flour and baking powder. Beat sugar, eggs, and lemon zest until fluffy. Stir butter and sour cream into the cream mixture and fold in the flour mixture. Slice the bananas, drizzle with lemon juice, and then fold into the batter along with the cornflakes. Pour the batter into the muffin tins and bake in the oven for about 25-30 minutes.
