Ingredients for 1 servings:

  • 150 g puffed amaranth
  • 200 g cocoa butter or liquid coconut oil
  • 1 vanilla pod(s), including the pulp
  • 50 g almonds, roasted
  • 60 g dates
  • 1 tsp cinnamon
  • 3 tbsp chia seeds
  • 1 tbsp goji berries
  • 120 g almond butter
  • 15 g baking cocoa
  • 120 g agave syrup or honey if not vegan

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

If using cocoa butter, melt it. Chop the almonds into small pieces. Chop the dates and goji berries. Knead all ingredients together, using a hand mixer if necessary. Then pour the mixture into a baking pan (20 x 30 cm) lined with baking paper and smooth it out. Place everything in the freezer for at least half an hour. Now cut the mixture into approximately 15 rectangles, as desired. Be careful! It may crumble slightly when cut. It’s best to store the bars in the freezer! They stay fresh for a very, very long time!
