Vegan overnight oats with nuts, fruit and vanilla

Ingredients for 1 servings:

  • 45 g oat flakes, fine
  • 2 halved walnuts
  • 2 half pecans
  • some hazelnuts (blanched and roasted)
  • 3 cashew nuts
  • 1 tsp flaxseed meal
  • 1 pinch of Bourbon vanilla powder
  • ½ tsp cinnamon powder
  • 100 g oat milk (oat drink), almond milk (almond drink) or soy milk (soy drink)
  • some blueberries
  • e.g. strawberries
  • e.g. apple, cut into pieces
  • ½ soft dates, chopped
  • 0.33 banana(s), cut into large pieces
  • 1 tsp almond butter or peanut butter
  • 1 tsp cocoa nibs
  • 1 Brazil nut

Instructions

Working time approx. 5 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 5 minutes

Pour the oats into a 500 ml screw-top jar, roughly chop the nuts, and add them as well. Then add the flaxseed, vanilla, and cinnamon and mix briefly with a teaspoon. Pour in the oat milk, almond milk, or soy milk and stir well to completely coat the oats. Finally, top with blueberries (or other fruit) and seal the jar. Refrigerate overnight (at least 2 hours). If you like cocoa, you can also add cocoa nibs to the oat and nut mix. Oatmeal also makes a very welcome breakfast for children.
