Ingredients for 4 servings:
- 100 g amaranth
- ½ liter vegetable broth
- 150 g peas, frozen
- 1 bunch of spring onions
- 4 bell peppers, mixed
- 125 g salmon
- 50 g tomato paste
- oil
- pepper
- basil
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
In a pan, fry the amaranth in 1 teaspoon of oil for 5 minutes, stirring occasionally. Add the vegetable stock and simmer gently for 30 minutes, stirring occasionally. Add the frozen peas and simmer gently for another 5 minutes. Slice the spring onions, dice the bell peppers, and dice the salmon. Add to the pan and cook for another 10 minutes. Stir in the tomato paste and season with pepper and basil.
