Amarena cherries

Ingredients for 1 servings:

  • 1 jar morello cherries
  • 350 g sugar
  • 100 ml Amaretto
  • 1 dashes lime juice
  • 2 shots of flavoring (vanilla flavoring)
  • 1 shot of bitter almond flavoring

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Italian Amarena cherries

Drain the cherries well (you won’t need the juice), place them in a saucepan with the sugar, and melt the sugar over a moderate heat, stirring frequently. Boil gently for about 5 minutes, stirring constantly. Add the spices and Amaretto (to taste—some people use a little less, but I like it best this way). Let the whole thing simmer gently for another 15–25 minutes, depending on how you want the syrup. Pour into jars. It keeps quite a long time—I can’t say exactly how long, because I always gobble them up pretty quickly. The recipe makes enough for 2 jars. The recipe comes from my Italian mother-in-law and is simply delicious.
