Amaretti cake

Ingredients for 1 servings:

  • 3 eggs
  • 100 g sugar
  • 85 g flour
  • 1 tsp baking powder
  • 1 pack of pudding powder, chocolate
  • 400 ml cream
  • 1 packet of vanilla sugar
  • 2 packs of cream stiffener
  • 200 g biscuits (amarettini)
  • Powdered sugar, for decoration
  • Chocolate sprinkles, for decoration

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours

Preheat the oven to 200°C (180°C fan-assisted). Line a springform pan with baking paper. Beat the eggs and sugar until frothy. Mix the flour, baking powder, and chocolate pudding powder and stir into the egg foam. Pour the batter into the springform pan, smooth it out, and bake in the center of the oven for about 30 minutes. Remove from the oven and let cool. Cut the cake base in half crosswise. Whip the cream with vanilla sugar and cream stiffener until stiff. Put about 2 tablespoons into a piping bag. Set aside 12 amaretti biscuits for decoration. Roughly crumble the rest in a freezer bag. Fold the amaretti biscuits into the cream and spread on the bottom layer. Place the cake lid on top. Dust with powdered sugar and decorate with chocolate sprinkles, cream dots, and amaretti biscuits. Chill the cake for 1-2 hours.
