Ingredients for 4 servings:
- 300 g rice (fragrant rice), or 500 g cooked rice
- 1 bunch of spring onions
- 2 tbsp oil
- 2 eggs
- 1 pinch of salt
- 4 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sugar
- 1 garlic clove(s), as needed
- 1 chili pepper(s), as needed
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes
Can be expanded into a vegetable stir-fry or used as a side dish.
Cook the rice and let it cool. It’s best to do this the night before. Wash and finely chop the spring onions. Heat 2 tablespoons of oil in a wok or heavy cast iron pan and crack in the eggs. Add a pinch of salt and fry until lightly browned (use less egg white if possible). Once firm, remove from the pan and break it up with a wooden spoon. If you like, fry the garlic clove in a pan. Then stir in the cold rice and heat gently, stirring constantly. Mix the oyster sauce, sugar, and soy sauce, then add it slowly. If you want it a little spicier, add some chopped chili peppers to the oyster soy sauce. Finally, add the spring onions and egg. The rice tastes great with duck, roast beef, or chicken, or with other vegetables as a stir-fry.
