Ingredients for 30 servings:

  • 200 g almonds, grated
  • 50 g dark chocolate
  • 125 g sugar
  • 1 tsp vanilla sugar (bourbon)
  • 2 egg whites
  • 1 pinch of salt
  • 3 drops of bitter almond flavor
  • Powdered sugar (for dusting)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Finely grate the chocolate. Combine the almonds, chocolate, sugar, and vanilla sugar in a bowl. Beat the egg whites with salt until stiff peaks form and add them to the other ingredients along with the bitter almond flavoring. Mix everything together to form a firm dough. Using two teaspoons, drop small heaping spoons onto a baking sheet lined with parchment paper. Bake in a preheated oven at 175°C (electric oven) for about 10 minutes. Cool on a wire rack. Dust with powdered sugar.
