Ingredients for 1 servings:

  • 200 g almonds, ground, without skin
  • 200 g sugar
  • 1 bag of vanilla sugar
  • 1 pinch of salt
  • 1 bottle of bitter almond flavor
  • 1 large egg white or 1.5 egg whites for smaller eggs
  • 30 g powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

makes about 30 cookies

Line a baking sheet with parchment paper. Preheat the oven to 220°C (top/bottom heat). Place the blanched and ground almonds, sugar, vanilla sugar, and salt in a bowl and mix. Mix the bitter almond flavoring and egg white and add. Knead into a smooth dough. Form balls by hand, approximately 2.5 cm in diameter. Roll the balls in powdered sugar and place them on the baking sheet, leaving enough space between them. Flatten gently with three fingers. Place the baking sheet on the middle rack of the oven and bake for approximately 8-10 minutes, until the edges are lightly browned. Remove from the oven and let cool on the baking sheet. The amaretti will be very soft immediately after baking. They will firm up as they cool.
