Ingredients for 1 servings:

  • 100 g almonds, ground
  • 1 small egg white
  • 3 drops of bitter almond flavor
  • 75 g icing sugar for the dough
  • some powdered sugar for dusting

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 22 minutes

Preheat the oven to 180 degrees Celsius (top/bottom heat). Place the almonds, egg whites, and bitter almond oil in a bowl. Sift the powdered sugar over the flour. Knead everything briefly. Important: Use only a small amount of egg white so the dough doesn’t become too mushy and sticky. If necessary, add a little more powdered sugar. Line a baking sheet with parchment paper. Form the dough into small balls, preferably with moistened hands. Place them on the parchment paper and press them in with your fingers to form a small point on top. Bake the amaretti for 12 minutes, then dust with powdered sugar. This yields approximately 12.
