Amarettini sour cream cake

Ingredients for 1 servings:

  • 250 g amaretti biscuits
  • 125 g butter, soft
  • 3 eggs
  • 100 g sugar
  • 200 g almonds, ground
  • 600 g sour cream
  • 50 g powdered sugar
  • 3 can/n mandarin oranges, drained, or fruit of your choice

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

quick, fruity, very tasty

Crumble the amaretti biscuits in a food processor and mix with the softened butter to form a dough. Pour the amaretti mixture into a springform pan lined with baking paper, press down firmly to form the base, and raise a small edge. Beat the eggs and sugar thoroughly in a food processor and fold in the almonds. Pour the mixture into the pan. Bake in a preheated oven at 170°C (convection oven) for about 30 minutes. Allow to cool. In the meantime, mix the sour cream with the powdered sugar. Spread the mixture onto the cooled base and scatter the drained mandarins on top.
