Amaretto muffins with meringue

Ingredients for 12 servings:

  • 4 eggs
  • 125 g butter/margarine, soft
  • 250 g sugar
  • 2 pinches of salt
  • 1 packet of vanilla sugar
  • 150 g flour
  • 2 tsp, leveled baking powder
  • 6 tbsp Amaretto
  • Lemon balm, for decoration

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Separate 3 eggs. Whisk together the fat, 125g sugar, salt, and vanilla sugar until creamy. Stir in 3 egg yolks and 1 egg one at a time. Mix the flour and baking powder, stirring in alternately with the Amaretto. Line a muffin tin with paper baking cups. Pour the batter into the muffins. Bake in a preheated oven at 175°C for about 30 minutes. Beat 3 egg whites with a pinch of salt until stiff peaks form, then gradually add 125g sugar. About 10 minutes before the end of the baking time, spread the meringue mixture onto the muffins in tufts. Let cool and decorate with lemon balm.
