Ingredients for 1 servings:

  • 3 eggs
  • 125 g butter or margarine
  • 125 g sugar
  • 1 packet of vanilla sugar
  • 1 tsp lemon zest, grated
  • 1 tbsp rum or arrack
  • 250 g flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • 100 ml milk
  • 150 g powdered sugar
  • 2 tbsp lemon juice
  • 50 g cake icing (chocolate)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Separate the eggs, beat the egg whites until stiff, and refrigerate. For the batter, whisk together the fat, sugar, egg yolks, vanilla sugar or lemon zest, arrack or rum, all at room temperature, for 4-5 minutes until fluffy. First, mix the flour with the baking powder and salt and add alternately with the milk, then the egg whites. The batter should fall heavily from the spoon. Using a tablespoon, drop 6cm heaps of batter onto the baking sheet, leaving plenty of space between them. Bake the American cookies in the oven at 180°C (top/bottom heat) for 12-15 minutes, then place them on a wire rack to cool. For the white glaze, whisk the icing sugar with the lemon juice until smooth. For the dark glaze, melt the chocolate. Once completely cool, spread the glaze over the bases of the American cookies. Let the cookies dry on a wire rack.
