American Amish Apple Fritters

Ingredients for 6 servings:

  • 2 tbsp white sugar
  • 2 large eggs
  • 255 g flour
  • 2 tsp baking powder, 10 g
  • ½ tsp cinnamon powder
  • ½ tsp salt
  • 60 ml milk
  • 2 tsp lemon juice
  • 370 g apples, peeled and diced
  • 1 liter of fat for frying, approx.
  • 160 g powdered sugar
  • ¼ tsp vanilla extract
  • 3 tsp water, warm, possibly 1 tsp more

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Beat the sugar and eggs in a large bowl with a mixer at medium speed for 1 to 2 minutes. Add the flour, baking powder, cinnamon, salt, and milk and mix well. In another bowl, combine the apple cubes with the lemon juice, then add them to the batter and mix well with a spoon (not the mixer). Pour the fat into a deep saucepan and heat to 175 to 180 degrees C, or bring the fat to this temperature in a deep fryer. When the fat is hot, use a large tablespoon (or a serving spoon) to lower the fritters into the fat, one at a time. When the fritters are golden brown (after about 2 to 3 minutes) on the side swimming in the fat, flip them over and fry for another 2 to 3 minutes on the other side. The fritters are done when they are nicely browned on both sides, but not dark brown. Remove the fritters from the fat with a slotted spoon and let them drain on paper towels and cool. For the glaze, mix powdered sugar, vanilla extract, and water in a small bowl until spreadable. Brush the glaze over the entire surface of each fritter and let it dry. Once dry, flip the fritters over and brush the underside with the glaze. Cool the finished fritters completely on a wire rack until the glaze has hardened, then serve and enjoy! Note: This batter makes enough for 6 apple fritters.
