American Cookie Grape Cake

Ingredients for 1 servings:

  • 4 eggs
  • 150 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 150 g flour
  • 50 g cornstarch
  • 2 tsp, leveled baking powder
  • ¾ kg seedless grapes
  • 375 g quark
  • 375 g mascarpone
  • 375 g whipped cream
  • 1 ½ packets of vanilla sugar
  • 1 pack of cream stiffener
  • 150 g sugar
  • 2 packs of cookies (American cookies with chocolate chips)

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour

For the batter: Beat the eggs for one minute until frothy. Mix the sugar, vanilla sugar, and salt, sprinkle in the batter for 1 minute, then beat for about 2 minutes more. Mix the flour, cornstarch, and baking powder and gradually add to the custard. Pour the batter into a 26 cm springform pan. Bake for about 20 minutes in a preheated oven at 180°C (top/bottom heat). Let the base cool and cut it horizontally into 2 pieces. For the custard: Beat the cream with the cream stiffener until stiff. Make a custard from the quark, mascarpone, sugar, and vanilla sugar and mix it with the whipped cream. Set aside about 1/4 of the custard. Wash the grapes, chop them up, and fold them into the remaining 3/4 of the custard. First, spread half of the custard and grapes on the bottom layer. Then arrange the cookies on top and spread the other half of the custard on top. Finally, place the last layer on top. Now spread the cream that was set aside on top and decorate the cake with it and the remaining cookies.
