Ingredients for 2 servings:
- 150 g flour, if desired, replace half of the white flour with wholemeal flour
- 2 eggs
- 150 ml milk, possibly more or less, depends on the type of flour
- 1 tsp baking powder
- ¾ tsp baking soda
- 3 tbsp sugar, including a packet of vanilla sugar to taste
- 1 shot of rum, rum flavoring or other flavoring
- Maple syrup or honey

delicious thick pancakes, also great with wholemeal flour and honey!
Place all ingredients in a bowl and mix with a hand mixer until a slightly thick batter forms. It’s better to use a little less milk at first and then add more if the batter is too thick. If the batter seems too runny, thicken with flour. Let the batter rest for about 15 minutes to expand. Preheat a relatively small non-stick pan on the stove over medium heat until the pan is nice and hot. You don’t need to use oil or butter for frying. Pour a little batter into the pan and brown on one side until air bubbles form in the batter, caused by the baking soda, and the batter has risen. Turn the pancakes over and brown them. In total, you’ll get about 5 to 6 thick, typically American pancakes from this amount of batter, although this will depend on the size of the pan. Stack the pancakes and drizzle with maple syrup or honey, if desired.
