American Spinach Pizza

The perfect american spinach pizza recipe with a picture and simple step-by-step instructions.

sourdough

  • 150 g Flour
  • 150 g Water

other ingredients for the floor

  • 500 g Flour
  • 10 g Fresh yeast
  • 1 tsp Sugar
  • 200 ml Lukewarm water
  • Salt

Covering

  • 200 g Sour cream
  • 1 tbsp Goat cream cheese
  • Garlic powder
  • White pepper
  • 1 tsp Espelette pepper
  • 400 g Spinach leaves -TK
  • 1 Onion
  • Garlic
  • Some sugar, salt, black pepper
  • Butter
  • 1 Mozzarella
  • 3 tbsp Flaked almonds

sourdough

  1. I used the easiest way to make a sourdough: Mix flour and water in a ratio of 1: 1 (weight). Fill into a sealable container and leave for three days in a room warm place without paying attention to it. The dough will begin to sour, it will bubble and then look almost like yeast dough.
  2. 2 …. if you don’t want to do that, you can buy sourdough or sourdough powder (1 tbsp of it).

Dough production

  1. Put the flour in a bowl and make a well in it. Heat the water and dissolve the yeast with a teaspoon of sugar in it. Pour the sourdough into the well and pour in the yeast water. Work everything lightly into the flour and let stand for 15 minutes. Add a big pinch of salt and then knead all the ingredients into a smooth dough as usual. Takes about 10 minutes, you can already tell while kneading how the dough is beginning to develop. Now put the bowl in a warm place and let the dough rise for about 80 minutes.
  2. If you do not want to use any additional yeast, you have to give the dough 3-4 hours to rest.

Covering

  1. 1. Mix the sour cream and goat’s cream cheese together until creamy, season well with white pepper, garlic powder and Espelette pepper.
  2. 2 Finely dice the onion and garlic cloves and sauté in a little butter until translucent. Add the spinach and heat slowly, it shouldn’t cook, just defrost. Season with a little sugar, salt and black pepper.

  1. Divide the dough into two equal portions and shape this into two circles with a diameter of about 22 cm without kneading again (if possible by hand, do not roll out, just pull so that the gases stay in the dough). Now spread the cream relatively thickly on both floors. Spread the spinach and grind over again with the pepper mill. Tear up the mozzarella and spread it, spread a few more dots of the cream and sprinkle everything with flaked almonds.
  2. Place the pizzas on the wire rack covered with a baking mat and put them in the oven. Now switch the oven to 200 ° C (top / bottom heat, no circulating air !!!) and bake for approx. 35 – 40 minutes, including the heating time. The dough should feel crispy, the cheese and almond flakes should be light golden brown.
  3. The pizza, with its thick, airy base, is more of a cake. In my opinion, the dough goes very well with the mild topping!
