White Chocolate Pecan Nut Cookies
In a bowl, beat the butter with a mixer at medium speed, gradually adding the white and brown sugars. Add the eggs and vanilla extract and mix until well combined. In another bowl, combine the flour, baking soda, and salt and add to the butter mixture, mixing until well combined. Add the chocolate and pecan pieces. Preheat the oven to 325 degrees F (conventional). Using a rounded tablespoon, drop mounds of dough onto lightly greased baking sheets, leaving about 2 inches (5 cm) between each cookie. Flatten the mounds slightly with your fingertips. Place a baking sheet in the oven and bake the cookies for 12 to 14 minutes. Remove the sheet from the oven and let the cookies cool slightly on the sheet. Cool completely on a wire rack. Repeat with the second baking sheet, then refill the first sheet if necessary. Continue until all the dough is used up. Makes about 84 cookies.
