Ampel Mashed Potatoes with Spicy Minced Meat Sauce

The perfect ampel mashed potatoes with spicy minced meat sauce recipe with a picture and simple step-by-step instructions.

Traffic light mashed potatoes:

  • 500 g Potatoes
  • 200 g Celeriac cleaned
  • 2 tsp Salt
  • 1 tsp Turmeric
  • 1 Spinach plant
  • 1 Small boiled beetroot
  • 3 tbsp Cooking cream
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill

Spicy minced meat sauce.

  • 250 g Mett half & half
  • 2 Onions approx. 200 g
  • 2 Garlic cloves
  • 1 Red chilli pepper
  • 3 big pinches Coarse sea salt from the mill
  • 3 big pinches Colorful pepper from the mill
  • 1 tsp Mild curry powder
  • 1 tsp Sweet paprika
  • 200 ml Beef broth (1 teaspoon instant)
  • 100 g Cooking cream 15%

Traffic light mashed potatoes:

  1. Clean and wash the spinach plant and blanch and finely chop the leaves for about 5 minutes. Peel and dice the potatoes and celery. Put 1/3 of the potato and celery cubes in a small saucepan with salted water (1 teaspoon salt) and turmeric (1 teaspoon), cook for about 25 minutes, drain through a kitchen sieve, return to the hot saucepan and top with cooking cream (1 tablespoon) , coarse sea salt from the mill (1 big pinch) and colored pepper from the mill (1 big pinch) with the potato masher. Put 2/3 of the potato and celery cubes in a small saucepan with salted water (1 teaspoon salt), cook for approx. 25 minutes, drain through a kitchen sieve, return to the hot saucepan and top with the cooking cream (2 tablespoons), coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches) with the potato masher. Halve the mashed potatoes. Mix / pound one half with the finely diced beetroot. Mix / pound the other half with the finely chopped spinach.

Spicy minced meat sauce:

  1. Fry the minced meat in a pan with sunflower oil (1 tbsp) until it is roughly crumbly, sprinkle with mild curry powder (1 teaspoon), sweet paprika (1 teaspoon), coarse sea salt from the mill (3 big pinches) and colored pepper from the mill ( 3 big pinches) and remove from the pan. Peel and dice the onions. Peel and finely dice the garlic cloves. Clean / core, wash and finely dice the chilli pepper. Put the onion cubes, garlic clove cubes and chilli pepper cubes in the frying pan and fry everything vigorously / stir-fry. Add the fried mince, briefly sear everything, deglaze / pour in the beef stock (200 ml) and let everything simmer for about 15 minutes without the lid. Stir every now and then. The liquid should be greatly reduced. Finally fold in the cream (100 g) and let it simmer for a few more minutes so that everything becomes a little creamy.

Serve:

  1. Place the 3 different mashed potatoes with a serving ring on the two plates as a decorative traffic light. Add the spicy minced meat sauce and serve the colorful food.
