Ingredients for 1 servings:
- ½ cup sugar
- 3 cups flour
- 1 packet of baking powder
- 2 tbsp olive oil
- 1 orange(s), grated peel
- 1 lemon(s), grated peel
- ½ cup milk
- 2 cups lemon flavored yogurt
- 3 eggs
- 1 tbsp butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Whisk the eggs with the sugar and yogurt, preferably with a hand mixer. At the same time, preheat the oven to 180 degrees Celsius. Then add the grated orange and lemon zest and mix everything with a hand mixer for about 3-4 minutes [this step is very important]. Now mix the baking powder and flour together and stir it into the cream mixture. Mix again with a hand mixer until a light and fluffy cream forms. Now grease any loaf pan with butter and add the sponge mixture. Place the cake on the middle rack of the oven rack and bake for half an hour. If necessary, check with a toothpick after half an hour to see if the mixture is cooked through.
