Angy's Banana Chutney

Ingredients for 1 servings:

  • 4 bananas
  • 3 tbsp brandy
  • 1 pinch of pepper
  • 1 tbsp butter
  • 100 g onion(s)
  • 150 g brown sugar
  • 2 tbsp lemon juice (lemon essence)
  • 1 tsp turmeric
  • ½ tsp curry powder, sweet
  • 1 tsp ginger powder

Instructions

Working time approx. 5 minutes; Total time approx. 5 minutes

Cut the bananas into small, even cubes, along with the onions. Bring everything to a boil in a saucepan, then reduce the heat to low and simmer for about 30-40 minutes, until it begins to thicken slightly. The bananas should be almost cooked through. When it’s thick enough, pour it into twist-off jars while still hot, immediately close the lids, and turn upside down. It tastes fantastic with poultry.
