Ingredients for 4 servings:
- 4 beef roulades
- 400 g minced, seasoned
- 4 onions
- Mustard
- ketchup
- 8 slices of ham (farmer’s ham)
- 1 bunch of soup vegetables
- salt and pepper
- n. B. water
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 45 minutes; Total time approx. 2 hours 15 minutes
Peel the onions and cut into strips. Wash and trim the vegetables, then chop them into large pieces. Wash the roulades, pat them dry, and brush them with mustard and ketchup. Then place the ham slices and a few onion strips on top. Spread about 100g of minced meat on each roulade, roll up the roulades, and secure with roulade string or roulade clips. Heat a little oil in a pan and sauté the remaining onions. Now add the roulades, seam-side down, to the pan and fry. Turn them occasionally to brown them all over. Add a little water occasionally to allow the roasted aromas to escape from the bottom of the pan. When the roulades are nicely browned all over, add the vegetables to the pan and pour in the water. Let the roulades simmer gently for about 1.5 hours. Finally, remove the roulades from the sauce and pour the sauce through a sieve, seasoning with pepper and salt (you can thicken the sauce a little if you like). Remove the ribbon or clips from the roulades and briefly return them to the sauce. Serve with red cabbage and boiled potatoes.
