makes about 50 pieces

Line a baking sheet with parchment paper. Preheat oven to 200°C. Dough: Beat egg whites until stiff. Stir in the remaining ingredients and then work on the work surface until smooth. Roll out the dough on a sugared work surface to a thickness of 1/2 cm. Using a sharp knife, cut out cookies (rectangles, squares, or bars) and place them on the baking sheet. Place the baking sheet in the oven on the middle shelf for about 10 minutes. Note: The cookies will become crispy as they cool. Remove the cookies from the sheet using the parchment paper and let them cool on a wire rack. Glaze: Roughly chop the chocolate and melt it in a water bath with the aniseed and oil, stirring continuously. Dip the cookies in the chocolate and let it set.
