Anise meringues

Ingredients for 24 servings:

  • 2 egg whites
  • some lemon juice
  • 100 g sugar
  • 1 tsp anise, ground
  • some food coloring

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Beat the egg whites with a few drops of lemon juice until stiff. Slowly add the sugar, continuing to beat until the sugar has dissolved and a glossy mixture forms. Fold in the anise. Divide the meringue mixture into portions (depending on how many colors you want) and color each portion with a food coloring. Fill each portion into a piping bag fitted with a star nozzle and pipe small dots onto a baking sheet lined with baking paper. Place in a preheated oven at 100°C for 3 to 3.5 hours. Place a wooden spoon between the oven and the oven door to allow moisture to escape.
