Ingredients for 1 servings:

  • 1 onion(s), finely chopped
  • 3 cloves garlic, finely chopped
  • 400 g tomatoes, pizza tomatoes (1 can)
  • 50 g tomato paste
  • 100 ml red wine
  • 3 chili peppers, fresh red & green
  • 1 tsp oregano
  • ½ tsp black cumin, ground
  • 1 tsp thyme, fresh, finely chopped (or 1/2 tsp dried)
  • 1 tsp rosemary, fresh, finely chopped (or 1/2 tsp dried)
  • ½ tsp cinnamon, ground
  • 2 sprigs coriander, fresh, chopped
  • olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

With tomatoes & chili, low-fat

Deseed the chilies, cut lengthwise into strips, and then into small cubes. Sauté the onions and garlic in olive oil until translucent, deglaze with the wine, and reduce until almost all of the liquid has evaporated. Add the chopped tomatoes, tomato paste, chilies, and spices, reserving a few coriander leaves for garnish. Simmer until reduced to the desired consistency (approx. 10-15 minutes), season with salt and pepper, and serve. Transfer to a bowl, garnish with the coriander, and serve. You can also braise chicken or meatballs in this sauce; it tastes just as good warm with pasta as it does cold with grilled food. We often serve it with fondue.
