Ingredients for 4 servings:

  • 1 zucchini
  • 1 bell pepper(s), red or yellow
  • 200 g mushrooms, fresh
  • 1 m.-sized onion(s)
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 2 tbsp, heaped tomato paste
  • 1 dashes balsamic vinegar
  • 1 pinch(s) of salt and pepper or chili powder
  • 1 pinch rosemary
  • 1 pinch of thyme
  • 1 pinch of oregano

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 6 minutes; Total time approx. 1 hour 26 minutes

Cut the zucchini and bell pepper into bite-sized pieces. Slice the mushrooms. Finely chop the onion and garlic. Sauté everything in a pan with a little olive oil over medium heat for 5-8 minutes. Empty the contents of the pan into a bowl. Mix well with the olive oil, tomato paste, balsamic vinegar, salt, pepper, and herbs and let stand for about 1 hour. Add more seasoning if desired. Serve with crusty white bread.
