Ingredients for 4 servings:
- 6 rolls, stale, diced or equivalent amount of dumpling bread
- 200 ml milk
- 1 onion(s), finely diced
- ½ bunch parsley, finely chopped
- 1 tbsp butter
- salt and pepper
- nutmeg
- 2 eggs
- ½ lemon(s), grated peel
- 125 g ham, cooked, diced
- possibly breadcrumbs or flour
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Heat the milk and soak the rolls in it. Heat the butter in a pan and sauté the onion. Mix the rolls thoroughly. If the mixture is still too dry, add more milk and let it soften. Mix the onions, parsley, eggs, lemon zest, and ham with the bread mixture. If the dumpling dough is too soft, stir in breadcrumbs or a little flour. Season with salt, pepper, and nutmeg. Then form about 12 dumplings and cook in boiling salted water for about 20 minutes. Remove and drain. Tastes great with creamed mushrooms.
