Ingredients for 4 servings:
- ½ eggplant(s)
- 1 zucchini
- 2 bell peppers, red and yellow
- 1 onion(s)
- 1 garlic clove(s)
- Oil for frying
- 200 ml tomato juice
- 1 tbsp sesame seeds
- 4 cl soy sauce
- pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean the eggplant, zucchini, and bell pepper and cut into 1 cm cubes. Finely dice the onion and garlic and fry in oil. Add the sesame seeds and toast slightly. First add the diced bell pepper, then the eggplant and zucchini, and fry everything briefly. Season with pepper and soy sauce. Pour in the tomato juice and simmer until the vegetables are tender. Season again to taste.
