Ingredients for 8 servings:

  • 1 kg potatoes, waxy, sliced
  • 1 ½ kg beefsteak tomatoes or plum tomatoes, sliced
  • 4 bell peppers (different colors) cut into strips
  • 1 kg onion(s) (vegetable onions) cut into strips
  • 2 packs of seafood, frozen Frutti di Mare (also works with fresh produce)
  • 2 squid(s) (tubes), cut into rings
  • Mussels, crabs, scampi, king prawns depending on your taste and budget::))
  • 1 jar white wine
  • 1 jar olive oil
  • Salt and pepper, possibly chilies to taste
  • Parsley

Working time approx. 30 minutes; Total time approx. 30 minutes

A delicious Mediterranean seafood stew

Layer all ingredients one after the other in a large pot until all are used up – important: start with a layer of tomatoes! Season each vegetable layer with salt and pepper. Finally, add 1 glass of white wine and 1 glass of olive oil. Bring to a boil briefly, then simmer on very low heat for at least 2-3 hours (an extra 1-2 hours won’t hurt). This rustic stew is a hit at every party. It’s especially delicious with fresh baguette, and if you like it spicy, add freshly ground dried chilies. It tastes even better the next day. Incidentally, this is an absolutely original recipe from our old neighbor from Madeira.
