Apple and asparagus salad

Ingredients for 4 servings:

  • 1 kg asparagus
  • 5 apples, sour
  • 3 tbsp lemon juice
  • 2 tbsp mayonnaise, light
  • 100 g crème fraîche
  • some sugar
  • 1 bunch chives, chopped
  • Salt
  • Pepper, white

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the asparagus, cut into approximately 1 cm pieces, and cook in boiling salted water for approximately 15-20 minutes until crisp. Drain the asparagus pieces on kitchen paper and let cool. Peel the apples, remove the cores, and cut into wedges. Make a sauce with lemon juice, mayonnaise, and crème fraîche. Season with salt, pepper, sugar, and the chopped chives. Mix the sauce with the asparagus and apple pieces. Ladle into cocktail glasses and serve.
