Apple and Brazil nut waffles à la Didi

Ingredients for 1 servings:

  • 4 m.-sized eggs
  • 5 tbsp sugar
  • 2 tsp cinnamon
  • 8 g vanilla sugar
  • 40 g butter
  • 12 tbsp wheat flour type 1050
  • 7 g baking powder
  • 100 g Brazil nuts
  • 100 ml apple juice
  • 100 ml sour cream
  • 2 m.-sized apples
  • e.g. lime juice
  • e.g. powdered sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Mix together the sugar, vanilla sugar, and cinnamon. Toast and grind the Brazil nuts. Mix together the wheat flour, ground Brazil nuts, and baking powder. Peel and core the apples, cut them into large pieces, and place them in water with lime juice to prevent them from browning. Beat the eggs with the sugar and cinnamon mixture until frothy. Add the butter and continue beating. Mix the apple juice with the sour cream. Gradually add the flour mixture and the apple juice mixture. Grate the apples and stir in. Grease and preheat the waffle iron. Pour a ladleful of batter into the waffle iron and bake the waffles until golden brown. Sprinkle with powdered sugar, arrange, and serve.
