Apple and Celery Soup

Ingredients for 4 servings:

  • 25 g butter
  • 1 celeriac, peeled and chopped
  • 3 apples (e.g. Boskop), peeled, pitted and chopped
  • 1 liter chicken broth or vegetable broth
  • 2 tbsp apple, diced
  • Salt
  • Cayenne pepper
  • Paprika powder

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Melt the butter and sauté the apples and celery for about 5 minutes. Add the stock and cayenne pepper and bring to a boil. Reduce the heat and simmer for 25-20 minutes, until the apples and celery are very soft. Blend with an immersion blender until completely smooth and transfer to a fresh pot. Heat gently, season with salt and pepper. Garnish each serving with the finely diced apple and sprinkle with paprika.
