Apple and grape strudel

Ingredients for 10 servings:

  • 125 g flour, smooth
  • 1 tbsp oil for the dough
  • 125 ml water, lukewarm, approximately
  • 1 tbsp oil for brushing
  • 30 g breadcrumbs
  • 80 g date(s), finely chopped
  • 2 tbsp raisins soaked in brandy
  • 100 g grapes (Rosaki), small seedless
  • 1 lemon(s), the juice
  • 2 apples, sour, depending on size, grated,
  • 1 tbsp pine nuts
  • ½ tsp cinnamon
  • 1 tbsp butter, melted, for brushing
  • 1 tbsp almond flakes for sprinkling

Seasonal swirls

For the filling, combine all ingredients. Prepare the strudel dough: Knead the ingredients until soft and easy to handle. Form into a ball, brush with oil, and let it rest under a warmed pan for about 30 minutes. Place the stretched-out strudel dough on a floured cloth and sprinkle two-thirds of the breadcrumbs over it. Then spread the mixed filling evenly over it, tuck in the edges, loosely roll up the strudel, place on a greased baking sheet, sprinkle with flaked almonds, and bake at 180-200°C for 30-40 minutes, depending on the filling. Brush the strudel with melted butter. This strudel can also be made with just grapes, cherries, or blueberries, depending on the season. Sprinkle with powdered sugar.
