Apple and leek soup with curry

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 250 g potatoes
  • 4 m.-sized apples
  • 1 tbsp butter
  • 1 tsp, heaped curry
  • 750 ml vegetable stock
  • Salt
  • Parsley
  • 250 g leek
  • 1 tsp sunflower oil
  • 75 g whipped cream
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Dice the onion, potatoes, and apples. Sauté the onion in butter, then add the potatoes, apples, and curry powder. Add the vegetable stock, bring to a boil, and simmer for 20 minutes. Finely chop the parsley. Slice the leek into rings and fry in oil. Purée the soup, add the cream, pepper, and parsley, and season to taste. Add the leek rings to the soup and serve.
