Apple and matjes salad

Ingredients for 4 servings:

  • 6 herring fillets
  • ¼ liter of mineral water
  • 4 eggs, hard-boiled
  • 4 gherkins
  • 4 small apples (about 500g)
  • 2 tbsp lemon juice
  • 100 g mayonnaise
  • 50 g yogurt
  • Salt
  • pepper
  • Dill (branches)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pour mineral water over the fillets, rinse briefly, dry, and cut into strips. Peel the eggs, scoop out the yolks with a spoon, chop, and set aside. Dice the egg whites. Dice the gherkins. Wash, dry, quarter, and core the apples. Drizzle with lemon juice. For the salad dressing, mix the mayonnaise with yogurt and season with salt and pepper. Toss with the salad ingredients, sprinkle the salad with the chopped egg yolk, and garnish with dill sprigs.
