Apple and nut cake

Ingredients for 1 servings:

  • 125 g sugar
  • 125 g butter, soft
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 3 eggs, size L
  • 175 g flour
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon powder
  • 75 g nuts, ground
  • 600 g apples, peeled, cut into pieces
  • 100 g butter
  • 100 g sugar
  • 1 vanilla sugar
  • 2 tbsp honey
  • 2 tbsp milk
  • 100 g almond flakes

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Preheat the oven to 160°C (fan oven). Cream 125g each of sugar and butter with the vanilla sugar, a pinch of salt, and the three eggs until fluffy. Whisk together the flour, baking powder, cinnamon, and ground nuts until well combined, then stir into the foam mixture until no lumps remain. Pour the batter into a 28cm springform pan lined with baking paper. Pour the apple pieces onto the batter and lightly press them into the batter. Bake in the preheated oven for approximately 30 minutes. Meanwhile, melt the butter, sugar, vanilla sugar, and honey in a saucepan; do not brown. Add the flaked almonds and deglaze with 2 tablespoons of milk. After half an hour, spread over the apples and bake for another half hour. The resulting caramel will be absorbed into the pre-baked batter.
