Apple and nut waffles

Ingredients for 1 servings:

  • 250 g butter, soft
  • 150 g sugar, fine
  • 2 packets of vanilla sugar
  • 4 m.-sized eggs
  • 375 g flour
  • 200 g walnuts or hazelnuts, ground
  • 2 m.-sized apples (Boskoop), or other apples suitable for baking
  • 1 dashes lemon juice
  • 250 ml milk
  • 1 shot of rum or Calvados, to taste
  • e.g. powdered sugar, for dusting

Instructions

Working time approx. 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Makes approx. 24 waffles.

Peel the apples, coarsely grate them or cut them into very fine pieces, drizzle with lemon juice, and set aside. Cream the butter, sugar, and vanilla sugar until fluffy, then add the eggs one at a time and mix well. Sift in the flour in portions and mix well. Slowly stir in the milk. Fold in the ground nuts and apples. If the mixture is too thick, add more milk and mix well again. You can also refine the batter with a good shot of rum or Calvados, but use less milk. The batter needs to rest for 20 minutes before baking. In my waffle iron, the waffles take just under 2 minutes to cook. Let the waffles cool individually on a wire rack. Dust with powdered sugar to taste.
