Apple and Onion Focaccia

Ingredients for 1 servings:

  • 700 g wheat flour, type 550
  • 480 g water
  • 12 g salt
  • 18 g yeast, fresh
  • 250 g apples
  • 30 g onion(s)
  • 1 tsp marjoram, chopped
  • 1 tsp sugar
  • some oil

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Peel and core the apple, and cut into small pieces. Finely dice the onion. Place both ingredients in a pan with a little oil along with the marjoram and sugar and fry until the apple pieces are soft, about 7 minutes. Allow the apple mixture to cool completely. Combine the flour, yeast, salt, and water in a bowl and knead well. Cover and let rest for 15 minutes. Then add the apple mixture and knead well. Cover and let rise for about 1 hour. Roll out the dough on a baking sheet, make a few indentations with your finger, brush the dough with a little oil and sprinkle with salt, and cover and let rise again for about 30 minutes. In the meantime, preheat the oven to 220°C (425°F) and place the bread in the oven, well steamed. After 10 minutes, reduce the temperature to 200°C (400°F), and bake the bread for another 15 to 20 minutes.
