Apple and onion vinaigrette with lamb's lettuce

Ingredients for 4 servings:

  • 150 g lamb’s lettuce
  • 24 peanuts
  • 1 apple, sour (Boskoop)
  • 1 onion(s), red
  • 6 tbsp rapeseed oil
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • Sugar
  • possibly feta cheese, diced or parmesan chips

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

For the vinaigrette, first whisk the oils and balsamic vinegar with salt, pepper, and sugar. Then finely chop the onion and grate the apple. Mix everything together. Wash the lamb’s lettuce and shell the peanuts. Arrange on a plate and drizzle with the vinaigrette. If desired, add either feta cubes or the Parmesan chips from the database.
