Apple and plum jam cake

Ingredients for 1 servings:

  • 1 sponge cake base, 3 layers, dark
  • 6 small apples
  • 1 packet of vanilla pudding powder
  • 1 jar plum jam
  • 4 cups of whipped cream (200 ml each)
  • 400 ml apple juice
  • 1 tbsp sugar
  • 1 pinch of cinnamon
  • 4 packs of cream stiffener
  • 4 packets of vanilla sugar

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Set aside one apple, peel, core, and dice the remaining five. Bring the diced apples to a boil with 2/3 of the apple juice, then mix the remaining juice with 1 tablespoon of sugar, a pinch of cinnamon, and pudding powder. Add this to the boiling apples and cook for one minute until you have a pudding. Whip the cream with vanilla sugar and cream stiffener until stiff. Spread the apple pudding on the first layer, cover with another sponge layer, and spread the next layers first with plum jam, then with cream. Cover the entire cake with cream and arrange dollops of cream on top. Wash the last apple, core it, and cut it into thin slices. Briefly dip the apple slices in lemon water to prevent them from browning. Then arrange them on top of the dollops of cream. Sprinkle some cinnamon on the cake as a decoration.
